I absolutely love to bake cupcakes! Of course the best part is the icing and I always prepare mine from scratch. I like to make mine thicker to create the most perfect swirls on top.
You will need:
• one stick unsalted butter (room temperature)
• 8 oz package of cream cheese (room temperature)
• one bag of powdered sugar (approximately 32 oz)
• 1/8 cup milk
*makes approximately 3 cups of icing. Recipe can be divided in half for a smaller portion.
Mix butter and cream cheese in mixer on high speed until fluffy. Slow mixer to low speed and add milk. Slowly add powdered sugar until the desired consistency is achieved. If the icing is too dry, add a tablespoon (or two) of milk. Comment and let me know how yours turned out!
